Vegan Mango Smoothie


On Saturday morning I tried out this delicious, easy mango smoothie recipe that I found on Minimalist Baker and modified just slightly. The recipe made enough for two smoothies, so . . . I drank them both. I sipped the first one while petting and complimenting my cats and finished off the second while inspecting the yard in my pajamas. A mango smoothie is a great way to start a summer Saturday—and two mango smoothies is even better!

Mango Smoothie

Ingredients:

1 can unsweetened lite coconut milk (13.5 ounces)
2 cups frozen mango chunks
1 tablespoon fresh lime juice
1/4 cup plain vegan yogurt

Directions:

Put everything in the blender and blend until smooth.
